a_man_of_many_foxes
Well southern states is quite broad, but there are two good furriers in Houston, TX. Sakowitz and Woody’s are both excellent furriers.

Charfur
to give you some clues about the locations of the different shops in France: https://www.wearefur.com/fur-fashion/about-fur/where-to-buy/where-to-buy-furs-europe/ I cannot give you any recommendations, since I have never bought any fur in France 😄. Of course there are more shops, but go to the internet and you can find them. French is still the dominant language in France so searching with French search terms might give you additional results. CoyoteMink
If you are going to vacation in the Carolina's (North or South) or Virginia, I would highly recommend Douglas Furs. https://dhmfurs.com/ I believe they have stores in Charlotte, Raleigh, Columbia, SC and Richmond, VA.
